BLINTZ SOUFFLE
  • 2 pkgs. Frozen cheese blintzes
  • 3/4 stick butter or margarine
  • 4 eggs beaten
  • 1/4 C sugar (or less)
  • 1 1/2 C sour cream
  • 1/2 C orange juice
1. Saute the blintzes in butter until they're golden brown. Place in large baking dish.

2. Mix together the eggs, sugar, sour cream, and orange juice, and pour mixture over blintzes.

3. Bake 1 hour at 350 degrees.

DAIRY NOODLE PUDDING
This recipe comes from mother-in-law. It's wonderful as a brunch dish and can also be served as a dessert with strawberries and sour cream.

  • 12 oz. Medium noodles
  • 1/2 pt. Sour cream
  • 16 oz. Cottage cheese
  • 3 oz. Pkg. Cream cheese
  • 3 eggs
  • 1 C milk
  • 1 tsp cinammon
  • 1 tsp. salt
  • 3 or 4 oz. Marmalade
Cook noodles til al dente. Meanwhile, mix milk and eggs together and set aside. Combine rest of ingredients with cooked noodles and pour into baking dish. Pour milk and egg mixture over top of noodles, making sure it sinks down into all the noodles. Let stand to soak. Bake 1 hour at 350.

KNISHES
  • 1 C scallions, chopped
  • 2 Tbs chicken fat
  • 2 Tbs sour cream
  • 2 C mashed potatoes
  • 2 Tbs. Water
  • s&p
Saute scallions in 2 Tbs. fat until soft, then add potatoes and sour cream. Stir until heated through. Remove from heat, add s&p to taste and set aside. In large bowl mix together flour & baking powder. Add eggs and 2/3 C fat, mix until smooth dough is formed. Knead dough lightly on floured surface. Roll out to 1/4" thick and cut into 8 circles. Put 2 to 3 Tbs. Potato mix in center of each circle, moisten edges with a little water and bring them to center pinching together to close. Prick tops lightly with a toothpick. Place on baking sheet and brush tops lightly with melted fat. Bake in pre-heated 375 degree oven for 30-35 minutes.

MATZO MEAL LATKES
These are my mother's light-as-a-feather latkes. Beating the egg whites separately is the secret.

  • 1/2 C matzo meal
  • 3/4 tsp. salt
  • 1 Tbs. sugar
  • 3/4 C cold water
  • 3 eggs
Mix matzo meal, salt, and sugar. Separate eggs and set whites aside. Beat yolks, combine with water, then combine with dry ingredients. Let stand 1/2 hr. Beat egg whites till stiff, then fold in. Fry till golden brown.

MY MAMA'S LUKSHEN KUGEL
This is my mother's recipe for the *best* kugel I've ever had. Yes, it's got chicken fat in it, which is bad for you. I use onion-flavored Nyfat instead - chemicals instead of fat. It's a toss-up.

  • 12 oz. noodles, cooked & drained
  • 1/4 C sugar
  • 1/4 C chicken fat or Nyfat
  • 3 eggs
Preheat oven to 350. Mix everything together. Put in buttered casserole and dot with butter on the top. Bake until browned and crispy on top, about 30-45 minutes. Try not to eat all the crispy noodles off the top first!
